Really Quick Fasting Pasta

 

Perfect for those times when it’s hot, you haven’t made anything in advance and you  arrive home after Wednesday night Vespers with a hoard of hungry children who need to be fed really quickly!

 

1 Lb. Pasta, such as Penne, Ziti, or other

1 Can Ready Made Pasta Sauce (w/no meat)

1 Can Diced Tomatoes

1 Tbsp. Dried Onion Flakes

1 Tsp. Powdered Garlic

1 Tsp. Italian Seasoning

1 Pkt. Ground Meat-less (soy ground meat substitute)

2 – 3 Tbsp. Basil Pesto (vegetarian variation), Very Optional

 

Heat up a pot of water.  Add a bit of salt, to taste. When boiling, add pasta.  While it’s cooking, place the remaining sauce ingredients in a microwave proof bowl and stir together. Heat it for several minutes.  Stir and heat again, if necessary.  About then, the pasta will be done. Drain it well. Stir pasta right into the warmed sauce.  Bless & Serve.

 

Joe's All-Purpose Lenten Pasta Dinner

Another good, quick Lenten dinner from Parishioner, Fireman Joe (Andrew) of Brownsville, TX. 


Add a package of frozen spinach to six cups of water, add a little salt, bring to a boil. Add a package of spaghetti noodles (you can also substitute your favorite noodles here). Cook as per directed on pasta package. Boil until pasta is tender. Drain. When not during a fasting period, top with feta cheese, or parmesan. During fast periods can add a can of snails, clams, oysters or shrimp to water prior to draining. Try adding a package of Veggie Burger (a very good option).  Chopped onions and/or garlic could also be added to spice up this quick dinner.
